Udon Noodle Salad with Pork & Herbs


Ingredients (1 serving)
- 1 pack Sanuki Udon Noodles
- 75 grams of pork, thinly sliced for shabu-shabu
- Potato starch as needed
- Olive oil as needed
- 1 leaf of lettuce, shredded by hand
- 2 leaves of shiso, sliced in half lengthwise
- 1 cherry tomato, cut into quarters
- 1/2 Japanese ginger, cut into fine strips
- Fine strips of white leek, to taste
- Daikon radish sprouts, to taste

- 1 tbsp. store-bought ponzu sauce
- 150 grams grated daikon radish
Advance Preparation
Microwave the Sanuki Udon Noodles. Run them under cold water and then drain them.
Stir together the ingredients listed under [A].
Recipe

1. Coat the pork with the potato starch. Briefly cook it (for about 30 seconds) in boiling water with the olive oil added.

2. Once the pork is cooked, immerse it in cold water and then drain it in a colander.

3. Serve the lettuce, shiso, and noodles in a bowl. Top with the pork from Step 2, cherry tomato, Japanese ginger, leek, and daikon radish sprouts.

4. Pour [A] on top.
